The “Sopas de cavalo cansado” or Tired Horse Soups are an energetic meal translated into a memory from ancient times.
These soups are part of a memory of a poor Portugal, in which the difficult times experienced made the Portuguese have access to an unhealthy diet, which translated into an unexpected gastronomic creativity. In some regions, they are also called tired donkey soups or simply wine soups.
INGREDIENTS
1 egg yolk
Honey (or Sugar) as needed
Corn bread (or pieces of old bread to taste) as needed
Red wine to taste
METHOD OF PREPARATION:
-Add a good red wine, the egg yolk and the honey (or sugar) and involve this mixture well.
-Break the corn bread into pieces (crumbled) and place in a bowl. You can choose another bread (crumbled).
-Finally, water over the bread the wine preparation.
Another option is to replace the wine with coffee.
In the old days, it was a common habit to resort to the “Soupa de cavalo cansado” for breakfast. The life in the countryside involved an unusual effort. It was necessary to have reservations, because the hard work lasted for many hours.
This was a very popular and usual meal in the days of our grandparents.
It reminded me of my childhood and I missed spending the summer vacations at my grandparents' house. I remember at this time seeing them every morning preparing the soups for breakfast. My grandfather continued the tradition of putting the wine, but my grandmother instead of wine watered the plate, with the leftovers from the previous day's bread, with coffee and sugar.
Satisfaction is the word that defines the way they made and ate this dish first thing in the morning, thus gaining strength to face the work ahead.
Whether with wine or coffee, this is another tradition that will stay in our memory.
Today, although it is no longer a necessary dish as a source of energy as it used to be, it is still remembered, if only to attenuate the “saudade”.
Our mission is to root our history by remembering our ancient customs, our people. The Roots collection came as a tribute to all of them.
